Vintage Update from Vineyard Manager Jason Krug
 
Winter is a peaceful time in the vineyard.  Vines are in slumber, dormant until warm Spring temperatures tell them it's time to wake and push life into the sleepy buds formed in the previous season. This is the time of the year that the crew bundles up in extra layers and gets to work cutting and shaping the vines for the new 2020 vintage. So much of what the growing season will give us is determined in the pruning season. Each cut and removal of older wood will determine how much new growth will come forward in the spring. By making choices of what to cut, where to cut, what wood to remove and shaping the vine, we are determining how much growth will come in the spring, where that growth will arise from, and how much fruit we want to set. Every grape cultivar from Sagrantino to Sangiovese will be pruned slightly different dependent on its growth habits, how it sets fruit, and what the winemaker's goals are. If I may borrow a quote from The Mandalorian, "this is the way." Pruning these vines takes time and strategy, and we will continue pruning most everyday until March when the vines just start pushing growth.

Join us for an afternoon of wine and food as Executive Chef Corey Hooks, demonstrates two signature Italian recipes. Learn helpful tips, ingredients used and steps involved in creating these delicious dishes. Tuscan white bean soup, perfect for our cold winter nights followed by a three meat Bolognese over Tagliatelle pasta. Chef Corey's dessert offering is a chocolate cup filled with spiced pastry cream.  Price includes the cooking demonstration, food sampling, 2 glasses of wine and recipe cards.

It’s the height of Prohibition in 1920s Chicago, and there’s a mob war brewing between the South Side Gangsters and the Northern Chicago Mob Outfit. The two ruthless crime leaders Hal Sapone and Beanie O’Dannon have finally reached an agreement on bootlegging practices in Chicago and have decided to pull together resources to undergo a collaborative effort with criminal endeavors.

On the surface, this strategy seems similar to bailing out a sinking ship with tin cups, nevertheless.

 
Recently, gangsters from the north and south have been spotted together at various speakeasies throughout Chicago, but the tension in the air is always thick enough to be cut with a knife. However, this newfound relationship between the opposing mob bosses has served, thus far, to inhibit gratuitous bloodshed as in the past. Part of the success of this truce is that both crime bosses have found new dames, thereby intertwining more mutual relationships between the two factions.  
 
The two sides will meet at Raffaldini Vineyards to resolve all remaining differences.  Will these two underground organizations resolve their disputes or will a massive melee erupt, rekindling the fatal flames between them?  This is where our dinner begins.

Jay has curated a flight of four top examples of this venerable red from around the world, including our very own Sangiovese Classico. The wines will be presented blind allowing you to focus on the differences in flavor and texture, and so you can explore your sensory abilities and gain a new appreciation for this wonderful varietal. 

From our winemaker, Chris Nelson, “The Salon tastings are my favorite events at Raffaldini as we get to learn more about how our wines fit into the overall picture of Italian wines. Blind tastings are the most informative way to learn about wine. Jay always makes this an entertaining event as well as very educational. Hope to see you on the 21st as we explore Sangiovese, the noble grape of Italy."

Movable Feast: Parapalooza

Movable Feast is one of Bookmarks' signature events, now in its eighth year. Presented by Bookmarks and Salemtowne Retirement Community, Movable Feast features authors in a rotation among guests who are seated at round tables. Like speed dating for avid readers, each table enjoys conversation and Q&A's with each author that visits their table.

The eighth annual Movable Feast will feature 21 authors whose works range from poetry to mystery to cookbooks. Guests can choose from two ticket options that include food and drinks.

Discover the Secret Season At Raffaldini

Welcome to the Secret Season

In January, as the vines sleep, we are preparing for the next vintage. Pruning, tucking, nurturing the vines, and in the winery, carefully blending, tracking the flavor profiles of the vintages lying in wait. The secret season is a time to let your senses explore. Enjoy the slower pace, the wide open spaces, the cool and quiet stillness of the season. Take an impromptu trip and enjoy the beauty of winter at Raffaldini that is perhaps the best kept secret of all. 


Vintage Update from Winemaker Chris Nelson
 
Winter is good for the young 2019 wines as they are left to rest after completing their secondary, Malolactic fermentation, which converts malic acid to lactic acid, giving the wines smoother mouthfeel and texture. The wines receive two small doses of sulfur dioxide to help preserve their fruit characteristics as oxygen slowly penetrates the oak staves to help the wines develop on a phenolic level (i.e. tannins, structure). 

We are also focused on the blending of our first 2018 red wines to be released in March, our 2018 SPQR and 2018 Bella Misto. Both wines are shaping up to be excellent, especially for the difficult growing conditions in 2018, and will be welcome additions to our tasting room lineup. Both of these wines will be bottled in the coming weeks.

The Little Theatre of Winston-Salem has presented professional-quality community theatre for more than 80 years. Generations have experienced spectacular productions as audience members, as well as the thrill of collaborating and creating onstage and backstage.

As a fundamental part of Winston-Salem's cultural scene, we invite everyone in the community to exercise their imaginations, stretch their creative muscles, and experience the transformative magic of live theatre.

The North Carolina Fine Wines Society was established as a nonprofit with two goals. The first goal is to promote the quality of North Carolina Fine Wines (Vinifera & Hybrids). The second goal is to fund a scholarship for NC students, attending NC Colleges or Universities, pursuing careers in Enology, Viticulture, and wine related Hospitality and Agritourism programs. 

Help us support the NC wine industry's growth by donating to our 501(c)(3) Scholarship Fund.  The fund is managed by the Winston-Salem Foundation, and 100% of your donation goes directly to the fund.  Click here to donate.
